Has anyone had a chance to try pacbuilder for Arch Linux? I understand 
it's similar to Gentoo's emerge and BSD's make world. Maybe I'm 
obsessed or just tinker-happy, but it would be nice to try it. Since 
I'm new to Arch Linux and scripting, how do I install and run 
pacbuilder, please?

Never heard of it. Interesting. It can rebuild a single package or the whole system.

You should also look at ABS (Arch Build System), which might be more what you are looking for.
